Yellow Peach and Blueberry French Toast Casserole

  • Butter or nonstick spray, for coating pan
  • 1 (12- to 14-oz) French bread loaf, thickly sliced
  • 1 cup fresh Family Tree Farms blueberries
  • 1 cup fresh Family Tree Farms yellow peaches, pitted and sliced
  • 8 large eggs
  • 2¼ cups whole milk
  • ½: tsp cinnamon
  • ¾ cup light brown sugar, packed
  • 1 Tbsp pure vanilla extract
  • Powdered sugar for topping (optional)

Grease a 9 x 13-inch pan with butter. Place bread slices into the prepared baking pan and top with fruit. Set aside.

Whisk the eggs, milk, cinnamon, brown sugar and vanilla until no brown sugar lumps remain. Pour mixture over bread. Cover the pan tightly with plastic wrap; refrigerate 3 hours or up to overnight.

Preheat oven to 350 F. Remove pan from refrigerator; remove plastic wrap. Bake 45 to 55 minutes or until bread top is golden brown. Sprinkle with powdered sugar if desired. Makes 4 to 6 servings.
