Fresco® Cocktail Cucumber Salad

Dressing
- 3 Tbsp fresh lime juice
- 2 Tbsp olive oil
- 2 Tbsp rice vinegar
- 1 Tbsp soy sauce
- 1 small garlic clove, minced
- 2 Tbsp honey
- 1½ lbs Fresco® Cocktail Cucumbers, thinly sliced
- 2 green onions, thinly sliced
- ½ small red onion, peeled and thinly sliced
- ½ cup fresh basil, chopped
- ½ cup fresh cilantro, chopped
- ½ cup peanuts, chopped
- 2 Tbsp sesame seeds, toasted
- Red chili flakes, optional
Prepare the dressing: Whisk all dressing ingredients in a small bowl.
Combine remaining ingredients in a large bowl. Drizzle with dressing and toss until coated evenly. Garnish with desired toppings and serve, or keep covered and refrigerated up to 24 hours. Makes 4 to 6 servings.
