Pecorino Romano is an 100% sheep’s milk Southern Italian cheese with a rich history dating back over 2,000 years. Its name nods to both its composition and origins: 'Pecorino' derives from 'Pecora,' means sheep in Italian and 'Romano' indicates its Roman roots. Today, the cheese is a Protected Designation of Origin (PDO) product predominantly made in Sardinia, known for its Sardinian sheep breed.  Zerto Pecorino Romano is made by select cooperative dairies and cheesemakers in Sardinia that combine start-of-the-art production techniques with traditional recipes. Each has worked for decades to uphold the island’s proud sheep farming heritage by sharing in the creation of Pecorino Romano PDO accordingly to the highest quality standards. Their sheep graze in pastures throughout the milking season, imparting the flavor of native Mediterranean grasses and herbs to their milk. This milk is collected daily and turned into Pecorino Romano DOP within hours to maintain the floral, herbaceous character imparted by the lush Sardinian landscape. Pecorino Romano has long held a beloved place in Italian and Italian-American kitchens, especially as a grating cheese. After 8 months of aging, Zerto Pecorino Romano PDO boasts a hard, grainy, and flaky texture, along with a white to straw gold color, and a distinctly salty, extra-sharp flavor. Its bright, grassy, and brothy flavor profile enhances a variety of dishes, from the traditional (such as cacio e pepe pasta and pesto sauce) to salads, gratins, cooked vegetables, and even baked goods like savory scones. Zerto Pecorino Romano DOP can also be broken into rustic cubes and eaten as is for snacking or on a cheese board. The cheese pairs well with robust and fruity red wines that smooths the salinity of the cheese, such as Chianti and Barolo. Pecorino Romano is also well-matched with a white wine that mirrors its lemon and mineral notes, including a Chardonnay or Pinot Gris. Sparkling wines like Champagne or Prosecco also make for a great pairing given their tendency to temper the cheese’s salty richness.
