Dom Pérignon is a brand of vintage Champagne. It is named after Dom Pérignon, a Benedictine monk who was an important quality pioneer for Champagne wine but who, contrary to popular myths, did not discover the Champagne method for making sparkling wines.

1976 - 1 bottle
A lush opulence on the palate is combined with a strong smooth balance blending fullness and depth. The extraordinary persistence seems to be everlasting, and is lifted with just a slight hint of bitterness (blood orange).
1978 - 1 bottle
This is a typical expression of a small harvest wine. Balance is then achieved through hints of barley, hazelnut and preserved fruit. A lively long finish, classically elegant, confirms this vintage's rather "virile" style.
1980 - 1 bottle
Clean and pure on the palate. The lively structured attack gradually gives way to the wine's fleshy fullness. Lovely persistence with a touch of citrusy freshness.
1982 - 1 bottle
The attack – round, luscious, fleshy and creamy – is remarkably balanced by a lastingly firm finish. Aromas of candied citrus melt into toasty notes.
1983 - 1 bottle
The attack is remarkable, clear cut, even forthright. There is a strong impression of solidity and intensity on the palate. This is followed by a powerful aromatic finish, presenting a perfect balance between smoothness and acidity.

The year 1985 was exceptional in its weather conditions and allowed the grapes to open well and to be picked from September 30 in ideal conditions. Lots of fullness and vinosity. Characteristics of figs and raisins predominate then give way to notes of undergrowth

Crisp and fresh but with a complex character of dried fruits and a hint of toasted almonds. Very fine and long on the finish.

An indefinable je ne sais quoi, never upsetting the integrity of the wine, has worked its charm.

Paradoxically concentrated yet creamy, it is energetic and warm in the mouth, focusing on the fruit, then gradually taking on more profound bass notes. The wine is currently still physical. It is compelling, tactile and vibrant rather than aromatic. The rhythm and tempo are more dominant than the melody. At first mild and delicate, then strongly, confidently mineral, persistent, precise, with a refined bitterness, and an iodine, saline tang.
