Rarely found in grocery stores and coveted by nearly all food aficionados, pork belly is a tender and flavorful cut used for braising, curing and slicing.  We include 4 pieces of 3-4lb raw, hand-cut boneless 1/2 pork slab bellies.

The hard bone is separated and removed by hand from the soft bones. Individual rib bones and soft bones (cartilage) are removed individually by hand, leaving significantly more meat on the belly and increases the overall lean content. The bellies are then squared up using a template so they are consistent in size. This entails trimming from all four sides so only the “center cut” of the belly is left. These bellies are then flipped over and the fat side is lightly trimmed. This process provides consistency of thickness across the entire belly.
