The Forno Toscano Firenze 80 is the latest advancement in Authentic Italian Wood-fired ovens. For over 40 years, Fontana Forni has been producing wood-fired ovens. From the very first prototype built, they pioneered the portable pizza oven concept. Constructed in Italy’s beautiful Marche region along the Adriatic coast, these ovens have been perfected in nearly every way. Uniquely constructed with long-lasting rock-based insulation and a dual chamber. The lower chamber is where the fire is built, the heat of which completely envelops the upper cooking chamber which is where the all of the real magic happens. Having the heat run through the walls as well as the roof allows for EVEN heat radiation from every side (Top/bottom, both sides, and the back). This cooking chamber comes accessorized with multiple cooking levels (each equipped with racks and pans), lights for maximized viewing, as well as a convection fan.
The Firenze is first and foremost a PIZZA oven, but because of its unique design, it is capable of SO MUCH MORE!! Having a convection fan allows for one to cook roasts, lasagna, stews, potatoes, anything you would cook in a traditional convection oven you can also cook in the Firenze. Because of the temperature control valves (air input/output) as well as built in thermometer, one is able to achieve not only the accurate high temperatures for pizzas, but also the steady lower temperatures for cookies, chicken, bread, and cakes. Including all of the racks as well as the pizza stone, these ovens have a cooking surface of three 16” x 28” levels. Which comes to a combined cooking area of over 1,300 square inches
