More than three decades ago, the family left Italy to bring their delicious specialty meats to America. What they found were some of the best raw materials they had ever worked with.
Whole Sweet Capocollo
Capocollo is made from one of the most flavorful cuts of pork, whole shoulder. It is rubbed with salt, pepper and white wine and dry cured for about four months. Our Capocollo is always lean and finely marbled. It is delicious when sliced thinly and wrapped in asparagus.
Pancetta is Italian-Style dry-cured bacon. It is often used as an ingredient in a pasta carbonara, or
wrapped around a grilled shrimp. It is equally delicious eaten in a panini with smoked mozzarella.
Mini Mortadella with Pistachio
Rich in flavor and suave in texture, Daniele's mortadella is a perfect anchor to any Italian sandwich. A 500 year old recipe, mortadella was first created by the monks of Bologna and Modena. They softened fresh uncooked pork for hours by hammering it in large porcelain bowls called "mortaios." After adding a blend of spices, the monks would pack the mixture into casings for slow baking in wood-fired ovens. Daniele still follows the time-honored tradition.
Sweet Flat Calabrese
This dry sausage is a favorite of the thousands of Italian immigrants who hailed from the sunny
Southern Italian region of Calabria. Made from premium pork, Daniele's Calabrese contains no fillers. The meat is coarsely ground, combined with spices, and hung to dry for months.
