Committed to quality, they use only Italian pork, expertly crafting Finocchiona PGI, Prosciutto Toscano PDO, and premium cooked meats. Renowned for their roasted meats, brined for days and slow-roasted in wood-fired ovens, San Savino brings the flavors and craft of San Gimignano to American tables. In 2025, they became the first USDA-approved producer of authentic Finocchiona PGI made in Tuscany according to the authentic recipe.
Rustic and aromatic, the Piacenti Finocchiona PGI Salame is the first authentic, Tuscan-produced fennel salame available in the US. San Savino crafts the product with Italian pork and whole, wild fennel flowers harvested on a single farm just outside San Gimignano. The fennel blossom lends the product an herbaceous quality that conventional fennel salami can't match and the coarse grind creates pops of rich fat. This is a “chef’s choice” salame and a standout on any charcuterie board, easily sliced at home due to its medium diameter and tender texture. Tuck inside focaccia with shards of Pecorino Toscano or slice thinly over a pizza with a squeeze of lemon for a taste of the Italian countryside.
